Freezer egg sandwiches for busy mornings: Lightly grease muffin tins + crack one egg in each well. Stick these in a 350 degree oven for about 15-20 minutes. Assemble: English muffins + egg + cheese + veggies, wrap and freeze.

I cannot get enough of these brownie bars. I calculated the nutrition info over at The Daily Plate and they’re not too bad! 221 calories per bar (it made 12), almost 8g protein and 3.7g fiber.

I had the best sandwich at a little shop downtown and have been dreaming of it ever since. It was a tortilla filled with roasted sweet potatoes, sweet peppers and eggplant, lime onions, toasted pecans, and housemade cilantro pesto. So good!
